Why Mess With Perfection?
After spending a week perfecting our Keto Bacon Pancakes recipe, it’s hard to see why we would ever stray and make a different version. But what about the days when you don’t want any bacon;? What if you are craving some fruit?
Well, our quicker, Blender Pancakes were made for mornings when you don’t have the luxury of time. And our Blueberry Pancakes recipe today is dairy-free and still just as easy! The batter is still made in a blender but doesn’t have any butter or whey protein. Even better, these blueberry pancakes are paleo-friendly! Every now and then, we swap out our favorite low carb sweetener, erythritol, for a hint of stevia.

We love stevia and we’ve gotten used to the taste. The only problem with using stevia in baking is that it lacks the bulk that erythritol adds. Because stevia is so sweet, you only use as little as 1/60 of a teaspoon! That can run you into some issues when a recipe calls for a cup of erythritol and you substitute it with so little stevia. The sweetness may be the same, but you end up with a lot less batter. Depending on your recipe, this substitution may also mess with how your foods bake. Sometimes a recipe needs that perfect balance of quantity and sweetness in order to turn out correctly.
For these low carb blueberry pancakes, a lot of sweetness was already coming from the blueberries, so we decided forgoing the erythritol wouldn’t be a deal-breaker. If your blueberries are a little tart, you can add a few extra drops of stevia to make the batter sweeter. However, when blueberries are in season, they are so juicy, tender, and sweet on their own! By the way, if you love blueberries, you’ll love this keto blueberry muffins recipe too!
If you don’t have any blueberries on hand, this recipe also works great with fresh sliced strawberries and also fresh raspberries. Since berries are all acceptable on a keto diet (in moderation of course) you can use any of these tasty little treats to make perfect low carb pancakes. Frozen berries will work in a pinch as well. What about mixed berries? Absolutely! There are so many ways that these pancakes can be made while still being keto-approved- it’s like a miracle recipe!

We think this recipe is better than what a restaurant can offer anyway!

- 1/4 cup almond flour
- 1 tsp coconut flour
- 1/16 tsp Stevia
- 1/4 tsp cinnamon
- 1/4 tsp baking powder
- 1 pinch salt
- 1 egg
- 1 tbsp coconut oil
- 1 tbsp almond milk
- 30 grams blueberries
- Combine all your dry ingredients in your blender or Nutribullet and shake to evenly disperse.
- Add in your wet ingredients and blend until combined. You can fold in your blueberries at this point or throw them in while the pancake is cooking.
- Heat up a bit of coconut oil in a pan until very hot and pour in half your batter. Add blueberries to the top of the pancake and cook until bubbles begin to stay around the rim of the pancake - about a minute and a half.
- Flip and cook for another 30 seconds. Do the same with the other half of your batter and serve!

Nope – coconut flour absorbs too much water to be used alone in large quantities.

Yes, any blender you have will work fine.
I used coconut milk instead of Almond, added a bit of vanilla, they were fantastic! ?
These are THE best low carb pancakes I’ve ever made (and I made plenty!!) These cook all the way through and aren’t spongy or wet in the middle..I added some vanilla and used monksweet. I did use the nutribullet but you might want to double or even triple the recipe as I only got almost three pancakes out if one batch. I did cook them with bacon grease and they cooked up perfect!!!! Thank you!!! My pancake cravings are finally satisfied after 8 months. I wanted to leave a picture but it doesn’t let me. :/

I have more erythritol than I have Stevia so wondering how much Erythritol I would use instead?
I would do about 1-2 tablespoons per serving/person, depending on how sweet you like them!

We’ve been eating paleo for quite some time, but I never really took an interest in muffins, pancakes or things like that until the rain has kept me inside. Hi Vicky! You use a “blender” with this recipe. Is it the nutribullet blender? Also, if you are making more than 1 serving will all the ingredients fit in the nutribullet?
Yes, I used a Nutribullet! I think you can fit 2 servings into the largest cup attachment of the Nutribullet. More than 2 servings though, I’d use a blender.
