Low Carb Greek Inspired Goodness!
After dining at an amazing Greek restaurant in Brooklyn, Elia, we were inspired to recreate a few of the dishes we sampled! A few weeks ago, we made an amazing braised lamb stew, and since then, have made it 3 more times- it’s that good. Another dish we ordered, and glad we did, was a lemon, chicken and egg soup called Avgolemono. It’s traditionally made with orzo so we ate most of the soup and just sampled some of the orzo, we couldn’t help it. At home, orzo wouldn’t fly, so we just riced some cauliflower for the effect. We had soup for days after making a giant batch. The soup refrigerates well, and could be frozen and reheated later!
To make it strictly paleo, leave out the heavy cream :).
