Creamy, Low Carb Broccoli Salad
I never knew about the wonders of broccoli salad until recently. In fact, I was never a huge fan of eating raw broccoli at all. Then I tasted a broccoli salad at a friend’s cookout and I was hooked. What was in this magical dish and was it keto-friendly?! I had to find out!
Broccoli salad can actually be made low carb quite easily. The ingredients are pretty straightforward and low in carbs to begin with. Of course, we wanted to tweak the recipe a little bit to ensure that it was 100% keto and still completely delicious. Here is the recipe we came up with that we know you will love!
But why eat broccoli salad? Well, to begin with, it tastes great. The salad is packed with cheese, crunchy almond slices, bacon, and a perfectly blended creamy dressing. If you are a fan of ranch, then you are going to obsess over the dressing we put on this salad- its ranch supreme! The dressing coats the cold salad well so that you have lots of flavor in every single bite. Since the dressing is thick, you won’t have to worry about it dripping off the broccoli as you eat- it will stick on well!
Another reason to eat broccoli salad is the fact that broccoli is healthy. One cup of broccoli has as much vitamin C as an orange. Vitamin C helps protect your cells from damage, boost your immune system and promotes healing through your body. Broccoli is also full of other vitamins and minerals from calcium to vitamin K. It also has plenty of veggie fiber that will help with your overall gut health. With just 2 grams of net carbs per ½ cup, broccoli is also keto-approved. Hurray!
There are other aspects of this low carb broccoli salad recipe that will help your
keto diet too. The bacon that is cooked and crumbled into the mix is a great way to get some extra fats into your meal (fats mean fuel for us keto followers!). The mayonnaise and sour cream do the same, giving you a nice boost of fats along with their yummy taste.
You are also going to love how quickly this salad comes together. There is no cooking required and all you need to do is mix the dressing and then toss in the rest of the ingredients. It does not get any simpler than that! It will really only take you about five to ten minutes to make this complete meal. And yes, broccoli salad can be a complete meal! You have veggies, cheese and protein all mixed together to create a very hearty dish.
Now that I have broccoli salad in my life, I am a big broccoli eater. That veggie that I use to turn my nose up at is now one of my favorites and I find myself craving this salad quite often. Ingredients

8 cups chopped broccoli florets

1 cup shredded cheddar cheese

1 cup shredded mozzarella

1/2 cup diced onion

1/2 cup sliced almonds

1 cup cooked, crumbled bacon

1/2 cup mayonnaise

1/4 cup sour cream
-
1/4 tsp salt
-
1/4 tsp ground black pepper

2 tbsp ranch seasoning

2 tsp apple cider vinegar
Instructions
Place the mayonnaise, sour cream, salt, pepper, ranch seasoning and vinegar in a large bowl and mix well.
Add the broccoli, both cheeses, onion, almonds and bacon to the bowl with the dressing and toss well.
