Keto Salmon Salad with Raspberry Vinaigrette

Avocado adds a creamy texture to the salad along with a lot of healthy fats, something every keto dieter looks for! Since avocado is fairly neutral in taste, it has been added to this recipe more for texture and nutrition. Be sure to choose a nice ripe avocado that will have a dark skin and give slightly when you squeeze it.

We like using arugula in this salad since it has a delicious, peppery bite to it. The arugula leaves pair well with the smoky taste of the salmon and they are also a nice match for the sweet homemade dressing. Ingredients
Salad
  • 4 cups arugula
  • 6 ounces smoked salmon
  • 1 avocado
  • 1/2 red onion, sliced
Dressing
Instructions
  1. Place the vinegar, olive oil, erythritol, lemon juice, raspberries, salt and pepper in a food processor and pulse until smooth.
  2. Place the arugula in a large bowl and toss with the raspberry dressing. Add the onion and toss again.
  3. Place the arugula mix in two bowls and top with the salmon and avocado slices. Enjoy!
