The main ingredients in our energy balls are walnuts and coconut. These two ingredients hold the key to fueling our bodies with nutritious, keto energy. Let’s take a look at the walnut first. Walnuts are actually one of the healthiest nuts out there. They are high in antioxidants and omega-3 fatty acids. Walnuts have been shown to help reduce inflammation and also lower heart disease risk factors. This powerful nut also can help you have a healthy gut as it promotes healthy bacteria growth after being ingested.
Coconut flakes help add some natural, low carb sweetness and also healthy fats. Coconut is full of fat and we know that keto dieters love fat! The fat is what will help give you energy. Fat is fuel for those of us in ketosis. And, it just tastes so good…
Coconut and walnuts add their own powerful flavors to the energy balls but the real taste comes in with the next ingredients. Unsweetened cocoa powder gives the keto energy balls a delicious, rich chocolate taste that is perfectly decadent for the holiday season. Peppermint extract (or candy cane extract) is what makes these energy balls taste especially festive. You can’t get any more Christmas-y than a candy cane!
To add a little more appeal to the candy cane energy balls, we also sprinkled a few crushed keto candy canes over the top. This adds a little more minty taste and also makes the balls look pretty. If you can’t find low carb or sugar-free candy canes, no worries, just skip it! The energy balls will taste just as great without them.
Once you make this recipe, you will have everything you need to get through the long December days. Of course, you will also be quite merry and cheerful as you enjoy your holiday energy treat. The candy cane taste is sure to put a smile on your face as you think of how wonderful this time of year is. Pop an energy ball in your mouth in the morning or grab one around 3 pm when you are surely starting to crash from a long day. These energy balls are delicious anytime! - 1 cup chopped walnuts
- 1 cup unsweetened shredded coconut
- 2 tbsp coconut oil
- 3 tbsp unsweetened cocoa powder
- 1 tsp vanilla extract
- 1/4 tsp peppermint extract
- 1/8 tsp salt
- 2 ounces Lily's Chocolate Chips
- 1 sugar free candy cane
- Place the walnuts, shredded coconut, coconut oil in a food processor and pulse to form a chunky paste.
- Add the remaining ingredients to the food processor and pulse to form a thick dough.
- Scoop the dough into 1 inch balls, rolling each smooth with your hands.
- Place the rolled energy balls on a flat sheet tray then drizzle with the melted dark chocolate. Sprinkle the crushed candy cane over the balls.
- Let the chocolate harden and then enjoy!
