Low Carb Pizza!
One of our favorite recipes in our 3 Day Keto Meal Plan is this low carb pizza. We call it “Pizza Express” because there’s nothing quicker or easier! You only need 5 ingredients, 2 of which are pretty much optional. We love making this for friends when they come over because the entire thing is ready to eat in under 10 minutes. In fact, we can magically pump them out faster than you can finish just one. Our kitchen becomes a keto pizza factory (the best kind of factory).
The key to the speed and ease of this recipe is the crust- it’s made out of cheese. That’s it. No eggs or flours to combine beforehand, just plain old, delicious shredded mozzarella cheese. The trick is to let your crust caramelize in your pan before piling on your pizza toppings. This is a similar technique used in cheese-shelled tacos… but that’s a recipe for later ;).
The result is akin to a thin crust pizza- crisp, yet chewy and strong enough to transport pizza toppings to you safely!

Feel free to add your favorite toppings to your low carb pizza. We kept it simple with a few slices of pepperoni, just jalapenos, mushrooms, peppers and bacon would all be great, low carb additions. As for seasoning, we added basil and oregano for authentic Italian flavor, but red pepper flakes, Parmesan and garlic powder wouldn’t hurt either.

Low Carb Pizza – Full Recipe
Servings: pizza |
- 3/4 cup shredded mozzarella
- 1/2 cup marinara sauce
- 4 slices pepperoni
- 1/2 tsp basil
- 1/2 tsp oregano
- Place 1/2 cup of your shredded mozzarella cheese into a cool frying pan and set it to heat on a medium heat.
- Wait about 4-5 minutes for the cheese to melt and begin to caramelize.
- Once it's quite dark in color, use a spatula to gently unstick it from the pan. The cheese should contain enough oil to prevent it from sticking.
- Pour your marinara sauce over top and spread it to the edges.
- Sprinkle the remaining mozzarella cheese over top of that and add pepperoni slices.
- Season with basil and oregano and wait until the top layer of cheese has melted thoroughly.
- Let it cool for about a minute or 2 on your serving plate, slice and enjoy!

When you take out the cheese from the frying pan, do you put it back in or in the oven?
You don’t take the cheese out of the frying pan until you’re ready to eat it! Let it brown and crisp up a bit, then add your toppings, finish cooking and then transfer to a plate. Hope that helps!
This pizza was fast and easy to prepare, and turned out surprisingly good despite the lack of bread. I suppose you go long enough without it you don’t miss it. Any way I’m not big on sauce so I used 2 tbsp and added parmesan, sausage and bacon. The “crust” is tasty all browned like that. Also had it with a side of ranch and salad along with an icy cold diet coke. Awesome!
